Question:
Which ski/snowboarding resort would be better? Camelback or Blue Mountain?

Apparently, I'm making plans right now with my classmates to make our last year of high school memorable by making a senior ski trip (we're juniors so we're planning early just in case)

We're also from NJ so we're traveling to Pennsylvania and plan on staying over night, but stuck between Camelback or Blue Mountain.
Which ski resort would be better and provide better housing for overnight stays?

I know this is a stupid question lol, but is it really expensive over there as well? (i.e. souvenirs, food, etc)

Both are good resorts, so either one you can't really go wrong with. Blue is probably a bit nicer, but slightly smaller. As for an overnight, from what I remember, there's nothing actually at Blue, there might be something small at Camelback, but both are pretty rural. Camelback sits near a small village, and is closer to Stroudsburg. Blue is closer to Allentown and Bethlehem. From Allentown/Bethlehem/Easton, you could easily get to both resorts (~30-60 mins). From Stroudsburg you can easily get to Camelback, and with more effort, Blue.

As for price, you won't find general expenses in PA to be any more than in NJ, however everything at the resort itself is very expensive, food included. They have a captive audience at the lodges, and they take advantage of it.
